I recently had to buy a new laptop (Samsung NP550P) which came with windows 8 installed and I really can't stand it. Is there any reason I can't format the disc and install XP pro sp3 which quite simply worked and did all that I need? If it's feasible, how would I go about doing this as I seem to remember something about install discs not letting you install over a later version?

None whatsoever as long as the drivers that run your laptop are compatible with XP.
