What would be a suitable server requirements for setting up hotel network infrastructure in Scotland?

I assume that by "hotel network infrastructure" you mean wireless (or wired) internet access in the rooms and public areas?

Rather than become involved in setting this up yourself you might want to take a look at a company that specialises in wireless and wired internet access for hotels.

The reason I say that is because you may find it's not as easy as it seems at first. A lot depends on the number of rooms you are dealing with, and the structural layout of the building(s).
