Microsoft office 2010 2003 options

I tried to create a banner type text using word art- In office 2010- (as per office 2003), and found it was not possible, however reading up another members input, he/she suggested saving a page in 2003 mode then re-opening it.

Tried this and it worked perfect. while I had this page open, I tried some of the other commands and you get a lot more advanced options than with either 2003 or 2010.

Can any explain why this is, and what other hidden options are in Office 2010.
