My new laptop is using Bing on Internet Explorer, how do I go about saving a page as you could do before, or can I delete Bing without causing any trouble with Internet Explorer. & use Internet Explorer 8 as before

To save a page to the desktop just drag the icon in the address bar to the desktop. You can just make Google your home page if you want. Bing is just another search engine.

You can make any page your homepage, http://windows.microsoft.com/en-us/windows7/Change-your-Internet-Explorer-9-home-page
You can also have IE9 open with one or more "tabs", for instance email and Bing and Google.
I wouldn't even think of going to IE8 from IE9.
You can right clcik any webpage and "add to favourites" in the normal way.
