language and spelling settings in Word 2003

I'm trying to help a friend at a distance ; he uses MS Word 2003; Not surwhat his OS is , but almost certainly Win XP. My version of Word is part of Office 2000 & my OS is Vista, so I can't simulate on my system what he sees on his. He has basically two simple problems : 1. How to set the default font to be Arial instead of Times New Roman; and 2. how to set the Language to UK English instead of US English. He can change things each time he uses his system, but he wants to set them permanently.
