Vista Installation minus driver updates

Hi.
Alright alright, i know im not the biggest Vista fan in the world but as i have a legit copy of ultimate oem, i intend to install it and then use the built in "Windows Complete PC Backup and Restore" to create a complete drive- image to DVD. So for future i can install from my backup dvd already activated updated and ready to go.
What i dont like however is Vista updating drivers when you first install it, can i disconnect my ethernet and then install vista to stop it updating.
Then go deselect driver updates, connect my net and download the proper vista updates. And then backup. ?
hope someone can help as i plan to do this very soon.
Of course i will be using xp for quite some time yet but want this task out of the way.

I guess i am also a little worried because im not sure of the number of times you can reinstall oem vista (on the same machine) and how many activations you are allowed .
