In word, how do you clear/delete the 'history' folder of recent documents that you have opened?

Do you mean the list that shows on the File menu? If so Tools > Options, General tab and change Recently used file entries to 0. If you close and reopen Word you can set it back again. To delete individual files from the list press CTRL + ALT + - (minus sign) and the cursor will turn into a thick - then click File then click on the file to be removed from the list.

If you open up word go to tools - options then select the general tab, from there you can delete the recently used file list.
