I have a gigabyte ga-p35c-ds3r board that has 6 sata 3gb/s connectors on the ich9r south bridge, And a gigabyte sata2 chip that has 2 sata 3gb/s connectors,
As I only want to fit one sata hard drive, And one DVD/rw, What connectors should I use,
And while writing, Is there a nice looking case, You can recommend for about £60/70, With fitted fans, And or a removable motherboard tray?, I have been put of the jeantech aqua, Write ups not all that good!.

If you have a SATA 2 HDD it can go on the SATA2 controller. The different connectors may be red and orange to denote the controller. Have a look in the manual, connect as advised. If you have a SATA 2HDD it may show up in "safely remove hardware" as they are hot swappable.

In the way of cases, while I don't have a specific one to recommend Thermaltake make a brilliant and highly recommended line of cases rangeing from £50 to £150:
