Everytime I starte up my computer, after the POST screen, and FastTrak133 thing comes up and it says "scanning IDE drives......."

then after searching it says "NO ARRAY DEFINED" then asks me to enter either "Fast Build" or to continue loading, but if I enter FastBuild, I can't do anything in there. After this I can continue to load windows xp.

Does anyone know how I can disable this or even what it is supposed to do?

The idea is that you write data on two or more drives in such a way that if one drive fails, data can be recovered from the others.

I would have a look in BIOS to see if something has been changed. I'm not expert. I expect someone will soon correct me.

You have a RAID motherboard or a promise controller card. You can either set it up as raid or use it as 2 extra IDE ports.
Not sure if you can disable on all mobo's, but certainly worth a look.
