I have had to reformat my harddrive and reinstall windows several times in the past few months due to one thing and then another. I have a service pack 2 disc, but the bit that takes the time is downloading all the later windows and norton updates.
Is there any way I can save these updates to disc and just add them after re-installing?

You can try noting the KB number and then typing that into the search bar on the MS site. It should take you to the download page for each update which you can then download as a separate file. It might be worth also noting the date so that they are installed in the correct order. You will probably need to check your update history to get these numbers.
