Can I run two monitors off my one graphics card? I was planning on using one and having one say showing my iTunes library etc. Is there a way I can do both off one monitor port on the back of my pc case?

If your graphics card has 2 outputs then the answer is yes, if theres only one output then no.

You could buy a splitter if you only have one output and show the same image on 2 different monitors but you cannot show 2 different images using only one output, its not possible.

An alternative would be to get a 22" Widescreen monitor if your card will support the resolution.

What's a 22" monitor going to do?

to have 2 windows open, side by side

He did say he wanted two monitors..and I say go for it mate...I have two 19" LCDs sitting side by side on my machine...and its great...but alas im running out of room again so very soon I will be adding another 2 19" LCDs to help sort that out...the way I see it if you can, then do it...and since I have two graphics cards in my machine I know I can...so yeah go for it mate.
