Right click in the task bar and choose Customise Notifications.

Under Behaviour you have 3 options for everthing that's showing in your Task Bar. Left click on whatever behaviour is showing at the moment and a drop down menu will appear.

right click each program and open the prefrences, these shoulde be(not always) and option to disable it from the task bar. Failing that, just right click it to close them, or failing that run msconfig and disable these from starting up.

Is it a case of too many icons showing in the system tray or is it that you have too many programms running on start up?
If it is the latter, then you should be able to select which programs that you do not want to start automatically. Click on START and then on RUN, in the dialogue box type MSCONFIG and then choose the startup tab, this will list all programs starting up with windows, untick the ones that you do not want to start with windows.
