Processes that have to be left running in XP

I have recently upgraded from Windows 98 to XP.

Whilst using Windows 98 I used to improve the stability of games and programs by using task manager to switch off any programs/processes that were not essential; to the running of the operating system. This effectively meant that all I left running was SYSTRAY and EXPLORE.

Looking in task manager for Windows XP I can see that there a lots of additional processes running. Therefore, please can someone advice me which ones are the core that I must leave running and which I can safely switch off.
