Go to Control Panel > Add/Remove Programs, choose the Microsoft Office entry and click the "Change" button (not the "Remove" button). The Microsoft Office installer will start up and give you three options:

1. Add or Remove Features.
2. Repair.
3. Uninstall.

Choose option 1, Add or Remove Features, then click Next. Untick the Outlook box and click the "Update" button. That will remove Outlook but leave the rest of Office intact.
