New Trend in SPAM

I have recently been receiving a lot of spam that gets past my BT Yahoo filters. I regularly get lots of the usual Viagra spams (and various permutations of the word Viagra) filtered into the bulk folder in Yahoo. However ones that get through and arrive in my Outlook Inbox always have daft sender names like Hobnail.Treestump or Serendipity.Roadsweeper and usually have Re: in the subject. I use a small utility called Peek (PocketKnife Peek) which lets you view the header and content without opening the mail. The text of these emails is usually readable rubbish.
What are these and how can one apply a filter rule to stop them getting through?

To a certain extent you can't stop them.

The spammers deliberately use this "readable rubbish" specifically to defeat the type of filters which react to words (Viagra for example).

All you can do is blacklist the sender's address on the basis that something may come from that address again and your filter (I use Mailwasher) will recognise it as being blacklisted.
