Open Documents, or any other folder.

Top left is ORGANIZE

About half way down is "Folder and search options"

About central in the box is "Single click to open....."

Control Panel - Folder Options - Single Click - Apply - OK

As a work around you could Right Click and the select Open. I know this is still two clicks but they are not speed dependant!
