Linux - Best way of keeping secure/updated?

Hi,

I have a few linux boxes and I'm finding the kernel updates, program updates are annoying.. they are often and sometimes tricky - but sometimes also loose their settings.

Whats the best way to keep a linux box up to date and secure?

I mean I know you can do apt-get and stuff, but lets say I wanted to install the latest kernel without risking damaging the kernel. Or is it even required that I update it for say a production system that will be exposed on the net?
