Bonjour is actually part of iTunes, but your problem may well be that bits are being left From the uninstall process and if I were you I would follow the instructions here and hopefully you will be able to install iTunes cleanly.

Bonjour is actually a network discovery technology. It helps Windows PCs to find and connect to Apple machines and printers. It's installed by default with iTunes, and does no harm, so I shouldn't worry about it.

You should be able to uninstall Safari in the normal way, but again it's doing no harm, and takes up very little space.

The iTunes installation problem could be due to a number of things, and the link provided by Chronus should be able to help you sort things out. ITunes is a fairly complex application, and installation problems can sometimes take a while to diagnose and resolve.

Try briefly turning off your anti-virus during installation. I have found that I had to do that occasionally.
