Hub, 2 pc's, software configuration.

I've only used routers so don't laugh to hard at my question please.

2x PC's, 1x 4 port hub Netgear Ethernet H EN 104 TP.

When setting up the configuration ie - IP, Subnet, Gateway you have to have a default gateway?

I understand you can set 2 local IP's (of your choice), subnet mask, but does gateway numbers only apply to routers/switches, or is a gateway number a standard number that comes with the hubs and/or it's software?

A gateway is like an interpreter. Two networks can have a physical connection but need a gateway to translate network comminication. You use a gateway to link two systems that do use the same Architecture, set of communication rules and data formatting structures.
