As far as I am aware, a SCANNED PDF File can NOT be edited - once scanned it becomes a .jpeg An ORIGINAL PDF file can be edited with an appropriate program such as PDF Converter Pro.

All you may be able to do is copy and paste into a new document - edit the new document - then convert the new document to pdf (if that's what you want)

Am I right in thinking that a scanned document could be editable once it has been processed by some sort of OCR software (often supplied with scanners)?

so OP must have scanned documents in and saved as a pdf. Most scanners have this facility. The question is did OP use OCR (optical character recognition) so the text is recognised as text, or did OP do a normal scan (which would save a picture of the page) to pdf. ?
