if i were to buy a Sony FZ11M laptop which isapparently okay for graphics and gaming with it's 512MB nVidia GeForce Go 6400, would it be possible to get a better, more powerful graphics card and switch them round.

Changing graphics cards on laptops is pretty near impossible as most of them are handled by a chip on the MOBO that can't be changed.
There are a very rare few where technically it could be upgraded, but I've never heard of anybody stocking the replacements, so it's largely academic.
