Email script not working

While I have done many layouts, I am fairly new to scripting, I have always been able to get by with html, but I have just created a website where I want to have a form, where people can email me. I have been reading everywhere how it is done, and even tried a few scripts found on the forum, with no success. I just never seem to recieve any emails.
I have made this test script, based on what I have seen and read elsewhere, I was hoping to get this to work, an then build a form on another page, but I still have had no success actually sending an email:

$to = "[email protected]";
$subject = "Test mail";
$message = "Hello! This is a simple email message.";
$from = "[email protected]";
$headers = "From: $from";
echo "Mail Sent";
?> /body>

If I run this script, I get the "Mail Sent" message, but I never recieve the email. I do not currently have outlook(or any other mail program) configured on this computer, as I use hotmail, which is why I didn't want to just use a mailto, can anyone help to get this to work, thanks tobyb
