Please excuse my complete ignorance, but when you read an e-mail and it has a part of it that turns the cursor to a hand & you can click on it. How do you create this when you write the e-mail?

This hand you are referring to is a link to a web site. If you want to add one to one of your e-mails, whilst viewing the web site you want to link, right click on the address bar (the http://..... bit) then click "copy", then in the text of your e-mail click "paste" and the web page address should appear in your e-mail. When you click off it, it should turn blue and your recipient will see it as a hand when he hovers his cursor over it.
