copying only updated files

I know how to backup newer files only by using xcopy but I can't find out how to do the same in Windows. Is there a command which says overwrite only newer files?

I am familiar with xcopy so no problem there.
My difficulty is with trying to send it to another computer, (named George). xcopy needs a drive letter but when I try to map George as Z it won't do it.
Does either computer need to be told that it can accept drive letters greater than G?
