From the xp command prompt help for choice

"choice is not recognised as an internal or external command, operable program or batchfile."

so basically you can't because it doesn't exist.

For help on any command in the XP Dos emulator, at the prompt type

nameofcommand /?

doing a script for university menu driven and using the choce script for the menu...

it works in vista ok just not xp...

Vista has an expanded DOS emulator compared with XP - you'll just have to do it a different way.

You can download an MS-DOS 6.22 Supplemental Disk from click here which includes Choice.com but you would have to make the file available to all PCs that need to run your script.
Using SET as outlined in the link by DieSse would be a better method if you have the choice. (No pun intended).
