backup software 2 as i hit the wrong key

Can antbody recommend some good backup software. I want something that works like an incrementale backup, but does not create new directories as xp backup does. What would be good is a backup device where I have an icon that when I click (or schedule)will copy all of my preselected data to a destination device, but only overwrite /copy the data that has changed. I also want the backup data to be able to be viewed in a "windows explorer" format. I also want to be able to connect the backup device(usb storage device etc)to a different pc so i can retrieve any files etc. At the moment I have toyed with the windows backup/briefcase/syncronise, but none of these solutions seem to hit the nail on the head for me.
