Backing up systems

We have a acer aspire 5551 laptop running windows 7 and a pc running XP SP3. What is the best way to back up our local disc C to a off line hard disc and create start up discs?

Acronis True Image is widely recommended, but I stick to the first two following Freeware.

Keep more than one Image, since corruptions by any method are not unknown. Always verify/check an Image after.

'Mounting' is allowed if you just want to get at a few old files/folders and not restore the whole system. All allow creation of boot CD/DVD.
