Back up small peer-to-peer office network

5 machines, with 1-5 accounts on each machine (varies), machines used/on at different times of day, different days of the week (only one is on and being used all day, 5 days a week). Basic security is in place in terms of restricting access to certain accounts/files but it's unsatisfactory (awaiting the go-ahead to change to Server 2003/client network). I've tried Syncback and Cobian, neither of which will perform backups on an `if last backup was missed` basis to cater for situations where a machine is used for 2 hours and switched off before the scheduled backup time is reached), using passworded compressed zips in Cobian fails as it doesn't support Unicode file names. Is there some simple, secure way of backing up to one machine and catering for so many variables?
