Is there anyway I can find out who has been reading e-mails that have been sent to me (via MS Outlook: e.g. audit my account)?

Do you mean who else they have been sent to?

If you look at the headers any carbon copies will be addressed there but not blind carbon copies so it is not perfect.

No, at work there are e-mail, pseudo accounts (with full permissions) that can be used to read and set permissions. Someone has been reading my e-mails but I don't know who.
