How can I create a append query that adds a line to a table with one of the fields being the current date and time?

Yes, you can either do it from within access or use the Windows Task Scheduler.

Try this:-
Create a form
In design mode open the form properties and set Timer Interval to 300000 (5 mins).
Create a procedure in “On timer” to run the query - DoCmd.OpenQuery ("YourQueryName").
When the form is open your query will run every 5 minutes.

Only problem with that method is that the DB has to be open all the time. One reason I suggested the windows task scheduler.
